Liquid Gold

Mediterranean Salad

2 cloves of Garlic

1 1/2 teaspoons Salt

1 head Boston Bib Lettuce

2 ripe Tomatoes

1/2 cup crumbled feta Cheese

1/2 can black pitted Olives

1/2 red Onion

1 Cucumber (remove seeds)

2 tablespoons ground dried Mint leaves

juice of 1 Lemon

4 tablespoons extra virgin Olive Oil

Using mortar and pestle smack garlic with salt until well broken down. Add in a small amount of olive oil and continue to smack into a smooth paste. Put smacked garlic paste into large salad bowl. Wash and cut vegetables and place in bowl. Sprinkle mint on top of salad. Squeeze lemon and then add oil last. Toss for 2 minutes until garlic is completely mixed throughout. Serve immediately.
